Daring to keep dreaming

Back to my day job. Something I’m passionate about but in a very different way. But the question was still turning over quietly in my head. By the end of the year the answer had begun to form. Food!!! That was it!!! I started exploring what that might look like. The first direction I landed on was financially complicated for a small start. The dream stalled, just as it was beginning. But it did not disappear.

24 Hours of Ice Cream and a call for change

From a can of sweetcorn to six flavours in four weeks. There are more flavours coming, more ingredients to explore, more of the world to taste. This is only the beginning. Our first two months have been a whirlwind, sometimes making ice-cream 24 hours a day to meet demand. So our next step in our journey is building towards a parlour, right here in the Hague, in 2027.

But ice cream is only for the summer, right? Yes, but we plan switch from ice cream in the summer to custom fruit crumbles in the winter; topped with marshmallow fluff, candy-floss, custard, cream or our not-quite-vanilla ice cream. The adventure continues….

A can of corn and everything at once

Eighteen months after that first question, I was in a supermarket aisle in The Hague when I picked up a can of sweetcorn and a thought arrived from nowhere. What if I made ice cream out of this? I bought an ice cream machine that afternoon. Not because I had a plan. Because something lit up, and I recognised the feeling. The sweetcorn worked. So the experiments began. Taro. Black sesame. Sweetcorn. Avocado. Beetroot. Carrot. Each one a discovery. Six extraordinary flavours in four weeks.

A question I wasn’t ready for

Someone truly remarkable and inspirational, asked me what made me light up. What were my dreams? I had spent so long making choices for other people that I had lost hold of what genuinely excited me. I did not know how to answer. So I sat with the question and waited.

The adventure is still going. Come and taste where it has taken us.
